Peanut Butter Chex Bars (Gluten Free)

These are really good. The flavor is similar to the Crack Corn that is so good. I got the recipe for the bars from Plain Chicken. The ingredients are gluten free, but you'll still need to check the particular brand that you buy to make sure. Every now and then something that is supposed to be gluten free is made in a plant that also processes wheat.
Peanut Butter Chex Bars
1 c. sugar
1 c. white Karo Syrup
1 c. peanut butter
1 t. vanilla
6 c. rice chex
1 c. spanish peanuts
First grease a 9 x 13 pan. You can use the same 1 cup measuring cup if you do it in this order: Put the peanuts and the chex in a really large mixing bowl. Put the sugar and syrup in a medium saucepan. Put the peanut butter in the measuring cup and set it aside. Then heat the sugar and syrup to a rolling boil. Let it boil for 2 minutes, stirring the entire time. Remove from heat and add in the vanilla and peanut butter. Stir well. Pour over the chex and peanuts and mix thoroughly. Pour into the 9 x 13 pan. Cut into squares when totally cooled.
