This cake is very summery and fresh tasting. As a bonus it doesn't take very long to make.
1 box Duncan Hines Orange Supreme cake mix
1 large can mandarin oranges (reserve 1/2 c. juice)
1 stick soft butter
1 t. vanilla
Mix everything together (including the juice). Bake at 350 in a greased and floured pan for 30 minutes.
For the frosting:
8 oz. cream cheese, soft
1 stick of butter, soft
2 T. orange juice
zest of one orange
Mix the cream cheese and butter. Add in sugar, then zest and juice. Frost the cake when it is cool.
